The best cooking class I’ve ever done and best Thai food I’ve ever tasted

点评:This was the best cooking class we have ever done - and we have done many all around the world. Firstly, the service and hospitality from Stephanie and Peedam was fantastic. We were picked up from our hotel at 9am - we did the half day class and cooked four dishes. We visited a local market which was so much fun - Stephanie explained all of the various ingredients to pick up including fresh fish and chicken, as well as all of the various fresh herbs. This was a market for locals. We then headed to the cooking school and made a start. There were so many nice touches - we firstly made a drink with blue flowers and lemongrass to enjoy when having the cooked dishes. We also made a fresh chicken stock to use for the curries. The class itself was absolutely fantastic because of the following reasons:
1) the space itself is so clean and welcoming. There is also enough work space to cook the dishes and the area where you sit and eat is set up so beautifully.
2) the combination of Stephanie (who is originally from France and a chef) and Peedam (who is Thai) is unique. They have obviously combined their knowledge and created the most amazing recipes with clever tips and tricks.
3) you are explained all the steps properly, have one on one teaching on all of the chopping, preparation and cooking from both Peedam and Stephanie (as well as an assistant who is there cleaning up after us and preparing things for the next dish). It is so well organised.
4) because of their experience they could answer allll of our questions - and my husband had a lot of these !
5) the food is the best Thai food we have ever eaten - we are from London and have eaten A LOT of Thai food all around Thailand as well. We were absolutely blown away by the flavours of these dishes - they were incredible.
6) there were so many nice touches to the class such as the drink that we made, a gift of coconut sugar and some spices to take home and fresh mango (chosen by Peedam at the market) for dessert.
7) we were recommended the types of sauces to use and where we could purchase them.
8) we were also taught how to beautifully present the dishes.
9) Finally and most importantly, we were taught how to replicate these dishes at home and gained a huge amount of knowledge.
Thank you Stephanie and Peedam for such an incredible experience - we will never forget it and you have created something really special here in Koh Samui.
