点评:Lecce is like no other place, and the Awaiting Table cooking Course is like no other class. 6 hours by train south of Rome, it's special and worth the journey. The city center is where the class meets, first in the main square to gather before heading off to do the shopping. It's an enlightening experience, lots of chat about the local food, the history of the area, Baroque churches, etc. then we go to the school to start in the kitchen. Nearly everything is bought and prepared by the students. Starting with making pasta from scratch! Almost every day we make pasta in different shapes. The sauce (and the other dishes) depends on the season, and what's available at the produce market. After a few hours of slicing, braising, grilling and more, we are all ready to take off our aprons and sit together and share a meal. Topics include olive oil production, Italy's unification, and variety of foods in different parts of the country and an education on wine. We take a break after lunch and return a few hours later for dinner. More cooking, talking, tasting and if you're lucky, the group is curious and engaged. So much fun to share the prep and later a meal with people from all over the world but all interested in Italian culture and cuisine. And Amaro! Silvestro (owner/ teacher) has all the facts at his fingertips. The depth and breadth of what he knows is mind-blowing. His encyclopedic knowledge of history, culture, religion, geography, and so many more things all come together in the discussion about the food people are making in Puglia. The staff works as a team with the students. It's a very communal environment. For those who are wondering, the wine is free flowing at meal time, in a variety of colors! This particular course was chosen so we could experience the "salsa" making. The work is backbreaking, and it was a scorching hot day, but we loved every minute of bottling those San Marzano tomatoes. We'll never look at a jar of tomatoes in the grocery store the same way after bottling 7 crates!
