点评:Really happy we did this full day class. We arrived in Oaxaca 5pm and this was our next full day in Oaxaca. I'm a 40-year food&beverage manager/chef and my partner has 30+ in restaurants as well, the experience was amazing. You do not need any culinary experience to enjoy this class. Very informative and fun guided 1/2 day at the largest market in Oaxaca (another highlight of the trip, so happy about this part). You will not only see amazing things at the market, but if you explore other markets in Oaxaca you will feel more "grounded". The second half of the day is at the Seasons kitchen 9which itself is spectacular) with chef and his very lovely team supporting your cooking experience. There were about 22 people in our class (all experiences) and the staff made the cooking fun and also on schedule. Afternoon begins with about 30 minutes of ingredient/dish overview and history of the school. Everyone works in groups of 3-4 on individual dishes but stops at important recipe points to see what all groups are working on. In the end the recipes and food quality are as good as you would experience in a very good restaurant. Everyone sits to eat and enjoy the day's efforts together. Quite a lot of fun, never rushed, very informative about the ingredients, dishes, and history of Oaxacan cooking. Chef Kaelin (son of the founder) has worked at Noma, 11 Madison Ave and with Thomas Keller - you will be in excellent culinary hands. Even if you only have 3 or 4 days in Oaxaca I would recommend this class.
