点评:The day after our truffle hunt at Le Pietre Vive, we returned for a cooking class with Chef Alberto and Chiara. It turned out to be another highlight of our time in Tuscany and easily a five-star experience.
The class lasted about two hours, followed by another hour to sit down and enjoy the lunch we had prepared. Our menu was wonderfully Tuscan and based on simple, fresh ingredients: squash blossoms stuffed with ricotta and pecorino, handmade pici pasta with homemade tomato sauce, grilled and roasted eggplant with pecorino and fresh tomatoes, and a ricotta and whipped-cream mousse made with Le Pietre Vive's own saffron-infused honey and with lunch we had, of course, their own Chianti Colli Senesi.
Chef Alberto was an absolute delight. This was an exceptionally hands-on class. Alberto would demonstrate a technique and then turn it over to us, offering pointers and encouragement while having us do the actual cooking. He was patient with our many questions, laughed with us, and clearly loves sharing his knowledge.
He was also terrific with our 10-year-old daughter, who loves to cook. Almost immediately he had her working the electric mixer to make whipped cream, and she remained completely engaged throughout the class. She wasn't given token "children's activities", she was simply included as another cook in the kitchen.
Chiara translated for Alberto and served as his unofficial sous chef. We had been truffle hunting with her the previous morning, so returning the next day felt less like arriving for another booked activity and more like coming back to see good friends.
Perhaps the best part was the setting. The class takes place in the actual home kitchen of the family that runs Le Pietre Vive. Nonna made a brief appearance, one of the family's older daughters wandered in to grab something from the refrigerator, and at one point the family cat casually strolled through the kitchen on its way outside. We felt welcomed and at home.
Afterward, Alberto and Chiara left the three of us to enjoy what we had made together at the family's table. Probably because of the simplicity and freshness of the ingredients, it was one of the best meals we ate during our two weeks in Italy.
If you enjoy cooking, I can't recommend this experience highly enough, particularly for families with children who genuinely like being in the kitchen. We came away with new techniques and recipes, but more importantly with the memory of a wonderfully warm morning cooking together in a Tuscan family home and now with new friends in Italy.
