点评:Had a fabulous day at the culinary school with a small group of friends. If you have any interest in cooking, and what it takes to be a fine dining chef then this is a must. It is not often you get to learn from a Michelin starred chef in an intimate setting.
All that said, this is not an intimidating place. Chef Michael and the whole Waterside team are relaxed, friendly and welcoming. The General Manager of the whole Waterside operation, Fred, popped in & out all day and between them they shared stories, jokes and experiences from the fine dining world. They made it a truly memorable experience, in keeping with the Roux family ethos.
We did the Beef Wellington course and it was brilliant. It’s a challenging dish (esp doing it to Waterside standards!) with many elements but Chef Michael patiently leads you through it and we all turned out respectable efforts. As part of the day Chef also cooks you a lunch, so you actually get to witness & mine a wealth of culinary tips & training beyond just the main dish you prep. My sense is you can get involved as much or as little as you like. We are all keen amateur cooks and plagued poor Chef with questions and debate - he took it all
In his stride & between he & Fred we got a master class in food & cooking.
The school itself is fairly new and the kitchen is top class, as you would expect.
You leave the day with a bag of goodies, your Beef Wellington ready to shown off, a full belly and great memories.
It is not a cheap day out but The Waterside is a 3 star establishment and Chef Michael & the culinary school maintain that standing. I think for a full day Michelin starred cookery course, lunch with champagne & wine, a Beef Wellington to take home and a smart bag full of goodies (apron, towel, books etc) it’s actually very good value.
