点评:I had stumbled into this workshop on a whim by a recommendation from a friend and am SO glad I joined in. At first I felt a bit intimidated about cooking, especially now that I’ve moved to Japan and was introduced to so many new ingredients. Aki-san truly helped me get my bearings in Japanese cuisine, and instructed the group in easy-to-follow steps that made every recipe digestible (in both meanings of the word!). She was patient, kind, encouraging, and informative. Not only did I learn about Japanese kitchen must-haves, but I also learned about the significance behind “umami” and the process of creating Japan’s recipe staple “dashi” from scratch. I discovered a love for pickled plum, and homemade onigiri (NOT the ones you buy at a konbini). To this day, I consistently make onigiri for myself on a weekly basis. Thanks to Aki-san, I have a new found confidence in the kitchen!
