点评:A fantastic behind the scenes tour given by Paul, one of the co-owners and the man who assembled most of the kit and so he really knows how everything works. Most other distillery tours we have been on are taken by a guide who learns the PR version of the history of the distillery, Paul gives you the inside knowledge of how to start a distillery in an old out building and to grow from there whilst telling you about what didn't work as well as what they got right along the way. Various tastings direct from the barrels of rum, cider in different oak casks making a sort of sherry, the spirit that will be whisky as well as their lovely gin with its lemongrass led botanicals. The whisky will be released next year and from the early taste it will be worth the wait. This was a great tour if you are interested in seeing how whisky is made from scratch in one barn, or in English Whisky claiming its place on the map, but Paul also talks with passion about the area, starting a new business, sourcing local and sustainability and welding!
