点评:My husband and I were actually there Feb 1, 2025 (I have just procrastinated too long to do this). I think it was possibly my favorite thing we did in Italy. I knew I wanted to do an olive oil tasting, but had a hard time finding a place. This was the first place I found, though I continued to look; I decided to go with Olive Hill Sabina and am so glad I did. I enjoyed hearing the perspective that Scott and Emma have, doing it regeneratively, and coming up against the way it has "always been done." I found it all fascinating...the tour of the farm, learning about the process, Scott and Emma's move to Italy and starting out, as well as the olive oil tasting. And their olive oil is potentially the best we have ever had, and wish we would have bought more to take home! Paying Emma and Scott for transportation is definitely worth it. And do NOT pass up eating at the local restaurant they recommend. If you are on the fence, I highly recommend you just do it. It was a great experience all around. The only downside was because of work being done on the trains (I think), and because we went on a Sunday, the trip to get out there from Rome was a little longer/earlier. But it was so worth it and a thoroughly enjoyable day.
