I have had better croissants from Starbucks, honestly. The one bright spot was the fresh cut fruit, which was genuinely great on a hot day.
Ironic that a market so clearly geared toward tourists is largely cash-only, a hassle when you are traveling. Also no trash bins nearby, so you end up carrying your cups and containers around for a while looking for somewhere to toss them. Noticed a few vendors handing out free samples seemed to size people up before offering, which left a bad taste (pun intended). These vendors offering free samples seemed selective about whom they approached based on their skin color or appreance.
The market's location near the Promenade des Anglais is convenient, and it's worth a quick walk-through if you are already in the area, but I wouldn't recommend spending much money here. Plenty of better, more authentic places elsewhere in Nice.
