点评:This was the best present ever! I went with friends and we had a fantastic day making around 45 kilos of a Wensleydale-type cheese (much creamier and tastier than anything I've ever tasted from a supermarket). Lunch was a selection of Lacey's cheeses, every one very different and delicious. While our vat of curds and whey was resting, we also inspected several cheeses at various stages of ageing to show how they mature.
Simon is obviously passionate about his art and so keen to share his knowledge. We learnt so much more than I was expecting and even got to bring home a goody bag of cheeses. I can't wait to have a go at home as Simon explained that you don't need lots of specialist equipment.
If you've ever thought you'd like to make a cheese, give this a go. Can't recommend it highly enough. And you are surrounded by the stunning scenery and villages of the Yorkshire Dales. What more could you want?
