点评:We had a wonderful time touring the market and cooking with Chef Ruben. He made sure to tailor the menu to accommodate our vegetarian preferences even though the other 5 guests in our class were not vegetarian. After visiting the market and buying our ingredients, we returned to the Sazon kitchen, sipped mezcal margaritas and Allende cerveza, and cooked a delicious, authentic meal. Our menu was pibil tacos (both chicken and cauliflower filling) on fresh blue corn tortillas. After roasting onions, various peppers, garlic, and tomatillos on a comal, we made guacamole and salsa verde (hand ground in molcajetes) and a spicy onion and habanero slaw topping called xnipec. We learned new techniques, discovered new ingredients, and made new friends. I highly recommend this experience and will do it again on my next visit to San Miguel de Allende. We also enjoyed meeting the precious hotel golden retriever "host" named Emma :)
