After visiting the mercado a couple of times (it was already saved as a must-do from TripAdvisor), my husband was set on one thing: real, authentic gorditas. A quick conversation with a museum guard turned into directions, and suddenly we were exactly where we were meant to be.
This is the kind of market that still feels deeply local—unpolished, honest, alive. The aroma of masa on the comal, the rhythm of vendors calling out their offerings, the quiet pride in recipes that haven’t changed in generations. The gorditas alone were worth the detour: simple, soulful, and unmistakably authentic.
The following day, during a cooking lesson with Savor at Casa de Sierra Nevada, A Belmond Hotel, our chef brought us back to the mercado to shop for ingredients for an authentic mole. That experience transformed the place entirely. We walked the stalls with intention—selecting chiles, spices, seeds, and discovering edible flowers I had never seen before. It was a true immersion into Mexican culinary culture, ingredient by ingredient.
