点评:I had a fantastic morning this morning learning to cook mole poblano, the most famous dish of Pueblo, Mexico.
The class is taught by Lety and her husband Carlos. After picking me up at my hotel, our first stop was Zapata Market, where Lety showed us all the products we would be using to make the dish. Then on to the kitchen, where we had a great time learning about the ingredients in mole, where they came from, how mole was invented, and how you make it. Of course we participated in cooking this dish, and also red rice and hibiscus tea, which was a lot of fun.
Before lunch was served, we walked a block to the local tortilleria topick up some hand made tortillas to have with lunch.

After I told Carlos and Lety that I was in Puebla studying Spanish, they were kind enough to ask me if I would like to have the cooking class in Spanish. I said I would, as long as they would be patient with me, speak a little more slowly than normal, and explain anything I didn't catch. So I spent four hours practicing. That was unexpected! And a real kindness on their part, putting up with my lousy Spanish. Normally, Lety speaks Spanish and Carlos interprets for her, but I got to have the cooking lesson directly from Lety, which was really fantastic!
