点评:This tour was a highlight of our Hawai'i vacation. There were five of us (self, spouse, 14yo, 12yo, 8yo) and we were the only ones that day so it turned into a private tour.
Stephen freely shared his ample knowledge. He explained the process of regenerative agriculture, starting at the compost heap, and going through companion planting, small mixed-use enclosures, succession planting, the importance of ponds and shade, and beekeeping. We learned how the food production and their farm-to-table restaurant Pele's Kitchen functioned together as part of the system.
We saw many different plants and fruits. We ate guava and mountain apples off the tree. We saw the vegetable garden. We tasted citrus and cinnamon. Stephen showed us ulu (breadfruit) and explained the different ways it could be prepared.
We saw cacao and coffee growing and heard a detailed explanation of how and why the farm is run as it is. After that, Stephen took us into the chocolate manufacturing area, explaining and showing the equipment used in the fermentation process, winnowing, roasting, grinding, tempering, and molding.
After the tour the "tasting" consisted in "each person gets to pick a bar". There were a wide variety and everyone enjoyed them. Stephen got a lawn chair and sat and continued to answer our many, many questions about operating a farm and producing chocolate (he was a very good sport).
I would say the chocolate is more commercially oriented (with a variety of different kinds of candy bars and fruit and nut mix ins), than high-end (with different cacao percentages, specific varietals, etc).
The gift store has many things produced by the farm, we got some lilikoi jam and guava jam. We also bought a number of chocolate bars from the wide select for ourselves and for gifts.
All in all we spent about two and a half hours with Stephen and had a wonderful experience. The only unpleasant part was the bugs -- wear some bug repellent.
Afterwards we went to Lava Tree State Monument which was nearby, and took Government Beach Road in a scenic tour before heading to Hilo.
The next day, we drove back down to Pahoa to visit Pele's Kitchen for breakfast, to tie everything together and to taste the ulu waffles.
We all enjoyed the whole experience very much, it was well worth the money.
