点评:The restaurant in the Whistling Swan Inn, Fish Creek is open under new management as of yesterday (June 17, 2022). If you’ve eaten there in the past, it’s not what it used to be and it may not know what it is yet. It seems to be called Gusto. There were pluses and minuses and given they just opened we were very patient and forgiving, understanding that the menu will evolve as they find their way. However some things must definitely improve sooner rather than later. Service for one. Although everyone (host, servers) we encountered was friendly and professional, service is off and it might be communication with the kitchen. Server (in training) was not well informed on the menu. Cooking was off but more on that later. The wine list is small but adequate and mostly reasonably priced. We found a nice bottle of Pinot noir. To start we ordered the charcuterie plate and a caprese salad. We were not informed that the charcuterie plate contained a rather generous portion of burrata which is a good thing but we wouldn’t have ordered the caprese (more mozzarella) had we known. That said, the charcuterie plate was artfully assembled and offered delicious quality product. 3 types of quality salami ( including finocchiona which was a real surprise) burrata, two types of cheese, pistachios, and condiments. It was also accompanied by crostini which we had to request and consisted of white bread toast with oil and garlic rub, not traditional crusty Italian bread, but it did the job. The addition of some olives and/or grilled or marinated veggies would be welcome. For entrees I recall a whitefish in pastry, cheese sauced pasta, shrimp (origin unknown) scampi, beef tenderloin, and maybe two more. We both ordered the beef tenderloin med rare. It came with grilled asparagus and bad French fries- dry, tepid, overdone and covered with shredded Parmesan. The steak was a generous serving and I’m sure would have been delicious but it was overdone. More medium or medium well than med rare. We did not send them back given the circumstances but informed the host when we left. We overheard other tables sending the beef back because not correct temp. Maybe they got the orders mixed up? The kitchen needs to pay attention in either case. Bottom line we’ll give them time to figure it all out before we try it again. It’s too expensive for uncertain outcomes.
