点评：My wife and I had the opportunity to spend some time in the charming small West Texas town of Marfa over the weekend. My mother's family is from the area(Ft. Davis) but I hadn't done much other than stop for gas in Marfa on my way to the Big Bend National Park over the years. What a surprise to discover Cochineal! The online reservation process was painless, although disappointing as we had waited to long to make a reservation for the prix fixe menu experience. We arrived promptly for our reservation, which was at the bar, and asked if there was any way to get on the prix fixe menu for tonight as well as sit at a table inside or outside. The staff was incredibly kind and asked for us to stand by for a few minutes. The chef was there and we had a wonderful conversation about the space, the building, the courtyard etc. Shortly after we were seated and from there, it was amazing. I wouldn't call my wife or I foodies but we enjoy good food and drink when we can. I would rate our experience at Cochineal well above many of locations we have visited around the western hemisphere. And the staff was amazing! Especially Chef Alexandra Gates, she spoke with us on several occasions during our time there and it was awesome. My wife and I will definitely be back.
