Costa was a disappointment in terms of service and quality of food. The featured shrimp crudo was covered in a sauce that totally overwhelmed the flavor of the red shrimp; the Capele pasta was inedible, with a fishmonger flavor which defined the dish, rather than enhanced the subtle umami of anchovy. The ravioli tasted like the pomodoro was out of a jar. The swordfish was bland and the halibut was overdone in terms of temperature as well as the heavy tastes of spring peas and pistachio in which the tiny piece of fish was presented. The featured Cacio e Pepe pasta was dry, chewy and bland. And rather than the marriage of tangy ricotta and charred broccolini that was promised on the menu, we were served cold broccolini accompanied by overly sweet ricotta that separated from the acid and vegetable and had a cloying taste.
The floor managers barely registered our unhappiness with the meal, and the manager, when told directly about our dissatisfaction, stared at us in a condescending manner and did not respond at all.
They removed the Cacio e Pepe from our bill and offered us a free tiramisu; however, there was absolutely NO interest in learning about why we were unhappy and what was wrong with the dinner.
If you want great Italian food featuring fresh seafood etc in Charleston, head to Legami or Sorelle, both of which live up to their reputation.
