Of course, operational duties are important—but so is nurturing team members who elevate the guest experience. A server who is building genuine rapport with customers is adding long-term value to the brand. In those moments, delegation and trust can go a long way. If a manager needs to pick up a mop to free a server to delight guests, that’s a win for the restaurant.
Luke has a lot of potential. I hope The Forge continues to invest in him and others like him—because that’s how good places become great ones.
