点评:I love old buildings and the history they invoke. When done right it's truly a top notch atmosphere and hops does it right. From the old brick walls that still have old advertisements on them to the tin ceiling it's just a pleasant environment. They have two long narrow rooms that were probably separate in the past, but combined they allow plenty of seating.
I ordered the Pastrami on Rye ($18). This is House smoked brisket pastrami, Swiss cheese, grilled onion, house pickles, and rocket sauce on sourdough rye. It is delicious. Complex weave of flavors all coming together to be a heck of a sandwich. I really enjoyed the pickles on them. I only got the chips with them and they were ok, but nothing special. The person I was with ordered the Trumpet Burger ($), a 2019 James Beard Foundation Blended Burger Project Award Winner. This is a 70:30 grind of local brisket and Pebble Creek mushrooms, house bacon, Roelli Red Rock cheddar bleu, Gochujang pickled shallot, arugula, and duck mayo on a sesame seed bun. It was declared to be fantastic. I had some of the fries that came with it and they were very good.
The service was excellent. Very efficient and friendly.
Overall an easy 5 star review. I understand why it's so popular in Holland and I will return.
