When I came back, I had a chance to observe the system, but only for a minute, as my order was ready. I was reminded of Tokyo train station: motion in all directions, but amazing choreographed and on time.
Unfortunately, that was the high point. The food was fine, but not worth a 40' round trip, even with the short wait (they were not answering phones to order ahead, and clearly did not need to). It's unrealistic to expect gourmet food from an operation with such a volume of turnover, and considering either: 1. the amount of output and the relatively short time that the ingredients could have had to interact and develop or 2: if it had been prepped a while ago, the taste was absolutely acceptable.
Will give them another shot on the way back from the beach when there won't be such a crush on the kitchen.
