Utilizing a “hyperlocal seasonal system” for sourcing ingredients, Chef Kevin Hennig ensures that only the best local ingredients are used at any given time. In doing so, he demonstrates a strong respect for this unique place and the temporality of its ingredients while concomitantly providing us with truly unique – and artistic – gastronomic delights. Indeed, for some, “eat local” is a catchy slogan, but for Raincoast Breads it is a philosophy and way of life.
I should note that Raincoast Breads is not a restaurant in the traditional sense. Instead, when you come here, you’re warmly invited into Chef Hennig’s home. White clothed tables are set for the number of anticipated guests, soft music plays on vinyl, and Chef Hennig and his team are hard at work in the large kitchen – all within full view for those interested in observing the action. The atmosphere is one of calm, perfect to enjoy a high quality meal and good company.
The menu at Raincoast Breads flows with the seasons and changes with some regularity. I find this exciting because it ensures at least a couple of things: 1) It guarantees that the ingredients, which are foraged or farmed locally, are of high quality and at their peak; and, 2) You will never get the exact same menu twice. Each visit thus becomes a culinary tour de force of Haida Gwaii.
I think it’s important to stress that one should visit Raincoast Breads hungry. The nightly offerings are set “tasting menus,” but the number of courses is more than enough to leave you in a healthy food coma! On the low end, your menu might feature “just” 9 courses, but on the high end you may have over 20 (!!!). In short, it may be tempting to ask for more of Kevin’s hand-made “arctic bread” if it’s on that day’s menu (the story behind this is beautifully captured in a CBC article), but if you do this you might not have enough room for what’s to follow!
The quality of the food produced at Raincoast Breads is nothing short of exceptional. Everything from presentation to taste is easily 5 stars of the highest order. A lot of the dishes, complex in their creation, look like literal pieces of foodie art. Consider the “Huckleberry Bubble Gum.” Made of huckleberry juice, seed & rind, rhubarb, wild mint, and lavender, this dessert item is super chilled to a temperature close to negative 20 and served. Put this delicate creation in your mouth and allow it to “melt” away. It’s wonderfully refreshing and a fantastic conclusion to a great meal. Or consider the “Cajun Sablefish.” Utilizing one of Haida Gwaii’s special ingredients from the sea as a canvas, Shoofly Galette, Fireweed blossoms, wild oxalis and sauce Pimenton are masterfully brought together into a beautiful and unexpected gestalt.
I could go on about the innovative and creative dishes at Raincoast Breads, but it’s better if you just check them out for yourselves. The whole experience provides a special look at Haida Gwaii – through food – and allows us to better appreciate this special place.
