We choose noble rice as it was on the Michellin list. However this is instead just an American sushi place with dressed up roles, inflexible menu, and staff who treat you like they are doing you a favour to be severing you. This is just not worth the money. The maki were all tuna and crab with amberjack and prawn tempura thrown in. American style with orange gels, cheese, and many topics just covering up any fish. The tuna sashimi “flown from Japan” was ok, probably the only thing that was. The waitress refused to remove cities from sashimi as it would “compromise the dish” despite the fact that my wife is allergic to citrus. After I asked my wife if we should leave in front of her she came back and said manager would do it. With that snotty Southern California cost style accent and the attitude of an airline stirrers who you need to listen to or be thrown off the flight … it was just bad. We spent $400 … not worth it.
Not enough sushi shaashi selection.
Rolls do not need so much “stuff” on them. If they do you are getting the wrong fish

You are not supposed to poor your own sake. The waitresses ask 100x if you want something but don’t poor your sake.
To Michellen guide: I’ve eaten at 300 Michel stars in 75 countries. This is NOT worth a mention at all. What I hope if this is just a mistake or you are adjusting to the local market which would compromise your entire guide.
