点评:Tratto and its chef had no idea how to prepare cacio e Pepe. It was by far the worst cacio e Pepe I have ever had. I dinned here on Saturday May 24, 2025. Has this woman chef ever been to Rome? I think not. It may have been sheep’s milk cheese and pepper but that is where the similarities end. I have had this dish all over Italy including the restaurant that claims to have invented it in Rome. It is delicious and a perfect example of simple Roman cooking. This chef ruined it. I have never had a bad dish of cacio e Pepe until Tratto. Does Chris Bianco know what is being prepared in his name? I imagine not. Had this chef ever had real cacio e Pepe? I would guess not. I waited a long time to go to this restaurant. Have no fears. The bar was wide open on a Saturday night holiday weekend. And after tasting the cacio e Pepe and paying $20 for a glass of wine which was ok but not great I see why. And the minuscule amuse bouche was not amusing. So small and not wonderful. A tiny tiny slice of radish on top of a salty pool of pesto. Salt in pesto? It was inedible. Amuse bouche is supposed to be an exquisite mouthful. It was neither. Try Tratto to get your own experience. Many people here have praised the cacio e Pepe. Makes me feel sad as I wonder if any one of them has had real cacio e Pepe? I imagine not or the reviews would not be so good. And prior visitors should make it a point to have this dish in another place either in Italy or made by an Italian chef elsewhere They will recognize the difference immediately.
