Do it, or state on your menu that you reserve the right to serve steaks as the chef sees fit. See how many patrons eat elsewhere.
Front house staff were excellent. I could not fault them. They made every effort undo the damage, but the second steak was not medium either, though better than the first and they poured an extra glass of wine. All appreciated, but in the end we ate our steaks alone, as my dining partner was finished as my second steak arrived. Not an optimal outcome for a $160 dinner. We tipped service staff well for their efforts, but I would not return.
