点评:We went for the 145 euro tasting menu, Entorno. We also did the wine pairing.
Before the menu itself we were served three types of excellent home baked bread with spicy olive oil from Ronda.
What a great start with Remy Massin Tradition Champagne. This was the only wine served which was not from Spain.
Without going into details of all the 10 dishes; some highlights worth mentioning:
Razor clams, sea urchins, shrimp tartar, red pepper ice cream
Beef tartar with caviar
Blue lobster
Goat cheeks in curry sause
Confit of squid and squid legs
Cured and grilles seabass
Pigeon breast served in bread crust a la Beef Wellington, nut much better.
Heavenly desserts where the iced lemon muffin was just fabulous. A new twist of Sara Bernard.
The wine pairing was creative & enforced and complimented the food. Often wine pairing can be a bit of a let down, in this case the highlight was actually a 20 year old cider from Valveran that was a perfect match to the cold lemon dessert.
The coordination between the chefs, the waiter and the sommelier was excellent.
We felt very well looked after and taken care of. The staff was highly knowledgeable, friendly and helpful.
This restaurant currently has one Michelin Star. We would be very surprised if not more stars are on their way.
