点评:Tim does the best roast in Bristol by far! The best part is it is always something different each time you go, and he combines unique and different flavours which elevates everything to another level. The trimmings get as much love as the meat and that is rare! Some of the standouts for me over the years have been the garlic butter greens, the butternut squash and truffle purée, and the roasted celeriac that goes almost caramelised. Duck fat roasties are unbelievable. Seasoning always on point. 3 courses for £28 which is an absolute bargain and given the quality of the food he should definitely be charging more!! The belly pork and slow cooked lamb have been some of the highlights for me and I love the fact we get salsa verde alongside gravy as it cuts through the meat and adds so much flavour. The belly pork I had today melted in your mouth. Starters and desserts always as good as the main. My favourite starter was the panzanella but they can range from soups to bean stews to pan fried fish. Tim is an incredibly versatile and talented chef and it’s always the best afternoon visiting Truffled. He is an absolute legend and I am very happy for him that the restaurant is getting so popular but sad for me because I will now have to wait a while to go back again!!
