点评:I have had the pleasure and privilege of eating at Michelin starred restaurants on three continents, though none as newly starred as this one. This is right up there in the top three. Firmly rooted in local ingredients as all good restaurants should be, which are lovingly and enthusiastically prepared and presented immaculately. We opted for the Chef’s Counter which I would strongly recommend. I won’t say too much about the experience - I think it’s best experienced cold to get the most joy from it - but I will say that any restaurant that as part of the experience gives you a tour of the kitchen and an opportunity to meet the staff working in it (I think this is Chef’s Counter only though could be wrong) has to have confidence in what it is doing. And that confidence is not misplaced. Outstanding - at times stunning - food coupled with immaculate service make this an experience well worth searching out. It would be invidious to single out any particular staff member, but our host at the Counter (Rosemarie) did an excellent job and was courteous, friendly and helpful throughout. If you’re in Quebec and get the chance to visit, do not miss this one.
