点评：Copal just open less than a month ago. I have been watching it “become” over the last couple of months and I’ve been very interested in what it might be. Tonight I enjoyed “Copal” for what it is in full, and I can tell you, with total confidence, it is an incredible experience and you should go there if you are in Oaxaca. The Chef and team are so very gifted, the food is “transcendent,” I can’t put it in better words. The staff are simply - well, they are lovely. So kind and so helpful, very eloquent in describing the dishes and the local background (which is just SO important to fully being part of the experience.) Copal is a MUST DO if you are in Oaxaca City. The location is perfect, the team is world class, and if you are lucky enough to have “Willy” and “”Omar” as part of your service - well, consider yourself very blessed to have that experience for you and your table. I have a strong sense tthat everyone who is part of the Copal team is a special person who was made part of the team because they represented the brand so perfectly. Here is the bottom line: if you are in Oaxaca City for one night or for many more, make sure”Copal” is on your list to ensure you take part in what can only be described as the beautiful “becoming” of what Oaxaca City is clearly on track to represent t on the world stage of great places on Earth.
