Highlights included pristine cuts of tuna (chūtoro), horse mackerel, red sea bream, pike conger (hamo), and rich uni with plump scallops—all remarkably fresh and full of flavor.
A few warm dishes were served throughout the course, thoughtfully woven into the flow of nigiri to create moments of contrast and rhythm. I particularly loved the chawanmushi—it was incredibly hearty. We also ordered two different kinds of sake to pair with the meal, which was subtle and measured, which really complemented the food.
