The bases are light and flavoursome.
The toppings taste fresh and feature ingredient blends that are non typical of most pizza places and the result is superb.
The Carbonara is simply amazing. Forget everything you have in your mind about typical Carbonaras in Australia. No cream! The sauce is made from pork cheeks, the fat is rendered down and the pasta itself is flavoured with the reduction. It is a completely different taste. Wonderful.
Montville is not without gourmet dining choices. It has The Long Apron and Altitude. Fioro & Co now deserves to be mentioned in the same breath but at a much lower cost and BYO alternative (soon to be licensed).
Seek it out behind the Montville Water Wheel and enjoy.
